Haitian Shrimp Creole with Air-Fried Yuca

This recipe for Haitian Shrimp Creole is a delicious and flavorful dish that is perfect for a special occasion. The shrimp are cooked in a savory tomato sauce with onions, garlic, and parsley. The dish is served with air-fried yuca, which is a crispy and delicious root vegetable.

Ingredients:

  • 1 pound large shrimp, cleaned and deveined

  • 2 tablespoons olive oil

  • 4-5 garlic cloves, chopped

  • Salt and pepper to taste

  • 2 tablespoons tomato paste

  • 1 cup shallots, red or white onions, chopped

  • 1 tablespoon parsley, chopped finely

  • 1 teaspoon Pikay Fire Slaw (optional)

  • 1/2 cup water

  • Optional slices of lemon or lime juice

For the air-fried yuca:

  • 1 pound yuca root, peeled and cut into fries

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Instructions:

  1. To make the shrimp creole, heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.

  2. Add the shrimp and cook until pink and cooked through, about 2-3 minutes per side. Season with salt and pepper to taste.

  3. Remove the shrimp from the skillet and set aside.

  4. To the same skillet, add the tomato paste and stir to coat in the oil. Add the shallots or onions and cook until softened, about 5 minutes.

  5. Add the parsley, Pikay Fire Slaw (if using), water, and lemon juice (if using). Season with salt and pepper to taste.

  6. Bring the sauce to a simmer and cook until thickened, about 5 minutes.

  7. Return the shrimp to the skillet and cook until heated through, about 1 minute.

  8. Serve the shrimp creole immediately with air-fried yuca.

To air-fry the yuca:

  1. Preheat the air fryer to 400 degrees Fahrenheit.

  2. Toss the yuca fries with olive oil, salt, and pepper.

  3. Place the yuca fries in a single layer in the air fryer basket.

  4. Air fry the yuca fries for 15-20 minutes, or until golden brown and crispy.

  5. Serve the air-fried yuca immediately with shrimp creole.

Tips:

  • For a spicier shrimp creole, add more Pikay Fire Slaw or another hot sauce to taste.

  • If you don't have an air fryer, you can bake the yuca fries in a preheated oven at 400 degrees Fahrenheit for 20-25 minutes, or until golden brown and crispy.
